Situated amidst the verdant surroundings of the Singapore Botanic Gardens lies the historic and iconic E.J.H. Corner House, now home to Roia, where Chef Priyam Chatterjee unveils his eagerly awaited debut menu. With a focus on natural and organic ingredients, Chef Priyam infuses each dish with his unique blend of French expertise, originality, and culinary finesse, crafting delicate tributes to the magnificence of Singapore.
In “Snowfall in Singapore” featuring Hokkaido scallop, daikon, nashi pear, lemon curd, and finger lime, he captures the refreshing innocence and awe of his first encounter with snowfall, reflecting the limitless potential of imagination. “Fungi & Corner” celebrates the Professor’s fascination with mushrooms and his love for orchids. Furthermore, Chef Priyam’s creation of “Corner’s Flowers” (highlighting Japanese Ginpo, smoked almond, beetroot extraction, and yuzu calamansi) showcases the inclusion of the unique and rare deep-sea protein, accompanied by a trio of sauces, colors, and strokes inspired by the works of his favorite artists, Jackson Pollock and Damien Hirst.
