Josh Niland, the innovative culinary mind behind FYSH at EDITION, The Singapore EDITION is revolutionizing the culinary experience with his cutting-edge fish steakhouse, a groundbreaking concept emphasising ethically sourced seafood and fish creations. At FYSH, dinner service presents a traditional steakhouse experience featuring premium ocean and land protein cuts complemented by side dishes.

The Yellowfin Tuna sourced from Walkers Seafood takes centre stage in various renditions. Diners can indulge in dishes such as the tableside-prepared Mixed Mooloolaba Yellowfin Tuna Steak Tartare ($34++ ), the Dry Aged Yellowfin Tuna Ribeye weighing 400g (S$125++) aged for 15 days, or the freshly butchered 200g Yellowfin Tuna Fillet Steak (S$68++), served alongside delectable sides like Salt & Vinegar Fried Onion Rings ($S12++) or Salad of Tomatoes, Plums & Chardonnay Vinaigrette (S$14++) .

Complementing the menu, the cocktail selection highlights the overlooked parts of fruits and vegetables, showcasing their unique flavors from root to leaf. Signature cocktails, like the Oyster Shell Gin & Sonic (S$25++) made with Never Never Oyster Shell Gin, are crafted to perfectly complement contemporary seafood dishes, offering an elegant and subtle drinking experience.
