#WeekenderEat: An Indulgent Communal Dining Experience At FYSH At The Singapore EDITION

Turn a lazy Sunday afternoon into a celebration of indulgence, connection, and gastronomic exploration with Josh Niland’s FYSH Roast Menu.

Available exclusively from 12:00 PM to 2:30 PM, this menu beckons seafood and white meat enthusiasts to embark on a culinary escapade. To maximise your dining experience, (priced at S$108++ per person), we strongly recommend dining in a group of 4 or more. Free-flowing champagne or Australian Bubbles can be ordered at an additional charge.

Diving Into The Starters

The starters impressed us with their richness and sumptuousness. The Swordfish Empanadas boasted a crispy golden crust that reminded us of curry puffs, a local delight and nicely complemented by roast garlic yoghurt’s creamy richness. The appetising Fish Head Terrine was neatly served on toast, and we could feel a zesty kick from the accompanying mustard, pickles, and onions. The FYSH Egg Tart was surprisingly savoury rather than sweet and was topped with a generous amount of trout roe. The Abrolhos Island Scallop with FYSH XO Sauce was delicate in texture but heavy in umami notes, making it an interesting combination. We particularly savoured the Charcoal Grilled Slipper Lobster, as its delicate smokiness was enhanced by the aromatic vadouvan spice blend and refreshing touches of lime.

Hearty and Wholesome Mains

After finishing the sides, we pondered whether we had space left for more. Upon seeing the generous portion sizes of the main dishes, we were reassured that there would be plenty to satisfy everyone, regardless of the number of diners.

The Roasted & Glazed Free-Range Duck was elegantly presented and tasted as enticing as it looked. Despite the slight char on the BBQ white peaches, it was served with, the flavour of the peaches surpassed our expectations and added a much-welcomed touch of sweetness to the dish. The Butterflied Aquna Murray Cod was served alongside a medley of fresh garden vegetables, infusing vivid colours and robust flavours to complement this delicate white fish. These two dishes can be served half (for 2 pax) or whole (for 4 pax).

If you have a larger gathering, we recommend trying the FYSH Signature Selection of Dry-Aged Mooloolaba Yellowfin Tuna Steak. Tuna sashimi lovers are bound to appreciate this dish. However, what sets it apart is its impeccable searing on the exterior, coupled with a wonderfully tender yet firm texture inside. Needless to say, the tuna comes with an array of delectable accompaniments. We want to give a special mention to the salt & vinegar onion rings, which are dry and crispy on the outside, yet juicy and bursting with flavour on the inside.

Among the single-serving options, we tried the Flowering Zucchini & Pecorino Pie, which has a milder and more earthy taste profile compared to the meat dishes. However, we believe this dish is generous enough to be shared among 2-4 individuals, making it a versatile choice for group dining too.

The Dessert Trolley

We ended the meal in a symphony of sweet treats. The Apple Tarte Tatin with Celeriac Custard is a timeless classic. The Chocolate & Murray Cod Fat Caramel Tart will satiate chocolate cravings with its richness and complexity. What stood out to us was the Trifle of Red Fruits with Rose Cream, Rose Jelly & Coconut, which creatively combined the sweetness of red fruits with the floral notes of rose cream and jelly.
