This Is Not Aloo Gobi

3. Firangi Superstar

Firangi Superstar’s food is not Indian as you know it, but Indian through another lens. Classics take on unexpected forms in the hands of Head Chef Thiru Gunasakaran, as they are reworked with a unique eye and modern approach.

The menu here takes a modern approach to classic flavours, designed to take guests on a journey through India, seen through an imagined kaleidoscopic fantasy lens. Menu sections consist of Chutneys and Raitas, Small and Large plates, Sides, Rice & Bread, and Desserts. Just over half the menu is vegetarian.

The must-order dish is ‘This Is Not Aloo Gobi’ (S$16). Cauliflower is presented in three ways: as a cous cous fried in ghee, mustard seeds and curry leaves, tandoor-charred florets, and incorporated into a coriander puree, then complemented with a spice compote, cashews, raisins, and deep-fried layered potatoes. In Chef Thiru’s hands, the versatility of the cauliflower shines, and although this dish is very much not Aloo Gobi, one can’t help but feel the memories of the classic ripple through with each bite.

Firangi Superstar is located at 20 Craig Rd, #01-03, Singapore 089692.
