A Foie Gras Rocher, dressed in candied fruits, Valrhona chocolate and tree nuts and a Jamon Iberico De Bellota sweetened with compressed cantaloupe. There are the wild rocket leaves and Taggiasca humid soil and a Smoked Duck Rice Paper Roll complete with crystalline ice plant and raspberry vinaigrette. There’s also a Fjord Trout Gravlax paired with pistachio cream cheese, keta roe, rice crackers and fine herbs…
