3. Path’s Culinary Odyssey by Chef Marvas Ng
Path introduces a freshly curated menu, meticulously designed to symbolize the next phase of Executive Chef Marvas Ng’s culinary journey. This culinary experience invites diners to relish the beloved East Asian flavours interwoven with his distinct French finesse. Path introduces a familiar prix fixe menu structure with three options: the Expedition eight-course menu (S$228++), the Voyage six-course menu (S$188++), and the Flow four-course menu (S$138++). As the names imply, Path’s new menus serve as a testament to the spirit of exploration and innovation that characterizes this new chapter in Chef Marvas’ culinary career.
Highlights include:
– Sea Cucumber: Tiger whelk and hand-dived sea cucumber sourced from Sabah are showcased alongside an array of housemade accompaniments
– Japanese Tai: Chef Marvas pays homage to the cherished Singapore chicken rice – albeit with a twist presented with “no chicken and no rice”.
– Bombay Duck: Deep-fried Bombay Duck fish is served with Chef’s version of a La Zi Ji (Sichuan Mala) made with multi cereals, coconut flakes, peanuts, lardon, as well as an assortment of Chinese herbs and spices.
– Straits Bounty: A tribute to the treasures of the Straits, line-caught local Marble Goby fish is embraced with a medley of earthy flavours; blanched angelica, cordyceps and morel mushrooms, and finished with a light fish consommé
