4. 藝 yì by Jereme Leung’s Springtime Seasonal Menu

The springtime seasonal menu highlights China’s well-loved ‘treasure of dishes’, the versatile bamboo shoot, with a delightful gourmet spread featuring 11 delectable dishes from the diverse regions of China. The seasonal menu features bamboo shoots fresh from their springtime harvest in China, and will be available for dine-in, delivery and takeaway exclusively on Raffles Hotel Singapore until 31 July 2021.

Delight in Taizhou-style Slow-braised Soon Hock Fish with Bamboo Shoots and Shanghai Rice Cakes, a perfectly balanced dish featuring crisp bamboo shoots as a foil against delicate yet succulent Soon Hock; savour Shanghai’s Pickled Du Xian Soup with Bamboo Shoots, Pork and Beancurd Skin, a rich and savoury salted pork broth with melt-in-your-mouth meat and crunchy bamboo shoots; and sink your teeth into soft Rice Cakes with Bamboo Shoots.
