7. Araya’s New Vegetarian Menu
Araya, helmed by Michelin-starred chef Francisco Araya and chef Fernanda Guerrero, introduces a new vegetarian menu and an exclusive private room just in time for the festive season.
Drawing inspiration from his Chilean South Pacific heritage and a passion for premium ingredients sourced from South America and Japan, Chef Francisco presents an 8-course Vegetarian Menu (S$298++) that transcends the ordinary. This culinary journey includes unique dishes such as Mashua (an Andean tuber) Potage with Andean Quinoa, along with delights like Beetroot Sorbet with Compressed Beetroot and Roasted Cauliflower on Aged Equatorial Cacao Sauce.
Since Araya’s opening on October 20, 2023, Chef Francisco has dedicated meticulous effort to craft a special sauce, incorporating Equatorial cacao, almonds, purple corn, raisins, cinnamon, and chilies. This sauce, steadily simmering and intensifying in flavor daily, enhances the dining experience.
