4. Quality Melts Pops Up at Ghostwriter
Quality Melts, an expansion of the hawker stall by Sago House alum Edwin Tan focuses on bringing “Chopped Cheese” to Singapore, Edwin aims to grow his modest hawker stall into a thriving F&B business. He launched Quality Melts in late 2022 at Cantonment Road Hawker Centre as an ode to the Chopped Cheese, a New York City bodega favourite: a hoagie roll stuffed with a mixture of beef, seasonings, and onions, cooked on a griddle and then chopped and smothered with cheese.
The menu for the Ghostwriter pop-up similarly focuses on the Chopped Cheese, offering a choice of beef, pork or cauliflower as the base, also available as a set including the sandwich and a choice of Tater Tots or Coleslaw as the side. During his run at Ghostwriter, Edwin will roll out a full grill and bar experience, also launching Quality Sodas, canned and carbonated sodas mixed with high-end spirits.
