5. Path
Path has come up with a limited Spanish Pork Rice Dumpling that offers a playful little twist. Inside a traditional-looking bamboo leaf wrapping is a decidedly non-traditional dumpling of Spanish pork hock stuffed with glutinous rice, porcini mushrooms, chestnuts, Australian abalone, lup cheong and dang gui or angelica sinensis.
When unwrapped and laid open for the diner, every bite offers layers of flavours and texture – from savoury collagen-tender pork skin to bouncy chew of abalone to the meaty bite of lup cheong and the buttery sweetness of chestnuts. And just like most of Chef Marvas’ other dishes in Path, the dumpling – measuring roughly 20cm each side and 9cm in height – can easily be shared.
