YUN NANS has launched six Chinese New Year menus, which feature new mainstays and curated favourites.
Served in individual portions, the Black Garlic Kampong Chicken Soup calls for Yunnan’s fermented solo clove black garlic. In addition, black garlic contains more antioxidants than the usual garlic. For the Steamed Glutinous Rice in Lotus Leaf, they have specially sourced for one of the best Hakka preserved vegetables from Dabu County. The preserved vegetables are produced in limited quantity and supplied to a very selected list of independent merchants.
A dish that will take you straight to Yunnan is the Steamed Jade Perch (Spicy Garlic Lime style), which is a Yunnan technique of steaming fish. Jade Perch is rich in omega-3 fatty acids and boasts a smooth and delicate texture. Other new dishes include Steamed Tiger Prawn with Fresh Lily Bulb, Braised Spinach in Superior Stock with Dried Scallops and Bamboo Pith, Double Boiled Peach Gum with Snow Pear.
