The Mast’ of Mozzarella & Co Celebrates Fresh Cheese At First Singaporean Outlet

Situated at the brand-new Frasers Tower, The Mast’ enjoys a prime location in the middle of the buzzing Central Business District. Replicating its sister outlet in Rome, The Mast’ in Singapore takes inspiration from the look and feel of an ancient dairy. Guests enter a bright and airy space washed in gentle shades of white. Wooden flooring, tables and hanging service boards add a touch of warmth and rustic charm to the dining room.

Puglia-born Executive Chef Cataldo Chiloiro helms the kitchen at The Mast’, with the restaurant’s fresh cheeses sitting at the heart of his menu. His creations showcase the finest produce sourced directly from Italy, with elements purposefully designed to complement the cheese they are paired with.

Salmone Scozzese E Zucchine Pinse (Buffalo Mozzarella, Smoked Salmon, Zucchini)

Designed specifically for the busy working crowd, The Mast’ proudly serves up typical Italian breakfast— offering everything from sweet and savoury pastries to heartier sets paired with robust Italian coffee. Guests can enjoy the Sfogliatella ($2.00)—a frolla pastry stuffed with fresh ricotta cheese. Italian Croissants ($4.00) and a range of Italian pastries encasing indulgent fillings ($2.50) are available for workers on the go.

For more substantial dishes, guests can opt for several savoury plates that include a Crostone ($14.00)—a slice of warm Altamura artisanal bread laden with a generous hunk of burrata, rucola and extra virgin olive oil.

Menu highlights include the Mozzarella e Prosciutto ($20.00) a delicious combination of buffalo mozzarella, 24 months aged parma ham, tomato confit and mixed salad. Guests can also appreciate the different flavour profiles and textures of the restaurant’s buffalo milk cheeses by sampling all three in the Tris Di Bufala ($28.00), a selection of burrata, mozzarella and special burrata served on schiacciata bread.

A variety of Crostini ($12.00 – $16.00) made with Altamura artisanal bread and topped with stracciatella provide the perfect complement to the osteria’s regional wines and draft beer from Italy.

Enjoy Pinse— A Roman flatbread crowned with a variety of delicious toppings. Guests can tuck into the Salmone Scozzese e Zucchine ($18.00) adorned with buffalo mozzarella, smoked salmon and zucchini. The Le Schiacciate ($18.00), a traditional Roman stuffed bread, is another scrumptious offering, teeming with fillings such as mortadella, stracciatella and truffle.

In addition to the regular menu, Chef Cataldo will also introduce new specials that showcase the season’s freshest offerings every week.
