Recipe: 5 Singapore Slings You Can Concoct At Home

Ong Lai Sling

  • 45ml The Botanist Gin
  • 15ml Cherry Liqueur
  • 10ml Cointreau
  • 10ml Benedictine D.O.M.
  • 30ml Pineapple Tart Syrup
  • 25ml Fresh Lime Juice
  • 1 dash Angostura Bitters

Directions

For the pineapple tart syrup

  1. Reduce 350ml of fresh pineapple juice with cloves, a cinnamon stick, ginger and star anise for about 20 minutes
  2. Add 250g of brown sugar and continue to reduce until all the sugar is dissolved
  3. Cool, and strain.

For the cocktail,

  1. Put all the ingredients in a cocktail shaker with ice
  2. Shake and pour into a Collins glass
  3. Top with crushed ice and garnish with a dehydrated pineapple slice, a mint sprig and a skewer with 2 Amarena cherries
  4. Serve with a straw
