2. Casa Restaurant
Located at CHIJMES, Casa Restaurant by Remy Lefebvre is a contemporary woodfire gastronomic restaurant that reflects Remy’s years of constant travel, his deep affinity for nature and produce, and his art of cooking with woodfire in the traditional way – woven into amazing showpieces that tell his life story on a plate.
Inspired by his childhood and formative years as a chef, Remy celebrates the seasons through finely curated produce, highlighting seafood over meat and serving one land animal a day on a rotation basis. Having lived in unspoiled places around the world, Remy seeks to preserve the natural environment and focuses on ingredients that are line-caught, responsibly sourced, traditionally farmed, organic and wild-foraged, and bio-dynamic.
Remy’s culinary education in Spain led him to see that no menu is complete without an egg dish. And as he believes that Singaporeans enjoy eggs from breakfast to dinner, the dish ‘Perfect Egg’ is ever-recurrent in his menu.
Ever since his first taste of pepper crab in Penang, Malaysia, Remy had sought to recreate it. In this version, he replaced Sarawak pepper with wild pepper from Madagascar and added a Thai basil salsa verde for freshness.
