Singapore’s dining calendar is never short on coveted tables or limited-run menus, but every so often, an evening comes along that feels genuinely singular.
On 18 April 2026, JAAN by Kirk Westaway will host a one-night wine dinner that brings together not one, but three of the wine world’s most respected palates for an intimate collaboration high above the city.
Set in JAAN’s elegant dining room on the 70th floor of Swissôtel The Stamford, the evening is designed as more than a pairing dinner. It is a meeting of perspectives, personalities and philosophies around food and wine, with each element shaped by a different voice at the table.
The event will feature Master Sommeliers Mathias Camilleri and Roberto Durán, alongside JAAN’s Head Sommelier Bella Sudarat Jankaew, who will each bring their own style and sensibility to a specially created five-course tasting menu by Executive Chef Kirk Westaway.
At the centre of the evening is the idea that wine can do more than complement a dish. In the right hands, it can sharpen flavour, shift mood, and turn a meal into a conversation. That is precisely what makes this dinner so compelling. Instead of a single sommelier guiding the experience from start to finish, guests will encounter three distinct approaches to pairing, each shaped by years of training, travel and service at the highest level.

Mathias Camilleri is the first Master Sommelier in Singapore, and the first Singaporean to earn the title on the world stage. He is widely regarded as one of the country’s most influential figures in wine, known for his balanced, precise and highly technical approach to pairing, always with a strong sense of harmony across regions and styles.

Joining him is Roberto Durán, the world’s first Spanish Master Sommelier, whose dynamic philosophy offers a more expressive, approachable lens on fine wine. With experience across Michelin-starred restaurants and elite wine programmes, he champions the idea that wine should feel engaging rather than intimidating, no matter the occasion.

Completing the trio is Bella Sudarat Jankaew, one of the region’s most closely watched young sommeliers. Her background across Thailand and France has shaped a refined and elegant style, earning her recognition, including second place at Thailand’s Best Sommelier 2024, finalist at Asia’s Best Young Sommelier Competition 2025, and the Sommelier Award in the Michelin Guide Singapore 2025 for her work at JAAN. She oversees a wine programme of nearly 700 labels, with a philosophy centred on balance, emotion and guest experience.

At JAAN, Chef Kirk Westaway’s Modern British cuisine provides the ideal canvas for this collaboration. His cooking is clean, seasonal and ingredient-led, with a focus on clarity rather than excess, allowing each wine pairing to interact with the food in a more intentional and expressive way.
For this five-course experience, each sommelier will interpret the menu through their own lens, creating subtle shifts in tone and personality throughout the evening. Some pairings may feel structured and classic, others brighter and more playful, while others lean into storytelling and emotion, making the progression of the dinner feel layered and alive.
It is this contrast in perspective that makes the dinner especially compelling. Rather than following a single narrative, guests will experience how three experts approach the same meal differently, revealing how wine can transform not just flavour, but interpretation itself.
There is also a timely relevance to this collaboration. Singapore’s wine culture has matured significantly in recent years, with diners becoming more curious, adventurous and open to deeper storytelling behind what they drink. Events like this reflect a growing appetite for experiences that go beyond pairing for pairing’s sake, offering instead a window into philosophy, craft and personality.
Lunch at JAAN is priced at S$198++ or S$238++, with vegetarian options available. The tasting menu is S$388++ and vegetarian options are also available, while wine pairing is available at S$88++ for three glasses or S$128++ for five glasses. For dinner, the tasting menu is S$388++ with a vegetarian option available, and wine pairing is S$268++.
