Chef Tomoyuki Kiga, formerly of Akira Back, has opened Wagatomo, a new Japanese restaurant. Serving a bolder, smokier brand of modern Japanese creations.
When we say smokier, think charcoal and wood. Look forward to premium quality ingredients cooked using an open grill fired by binchotan charcoal and oak wood.
Though refined and elegant, the ala carte menu available for lunch and dinner keeps your wallet in check.
Their signature A5 Wagyu Pizza (S$$32.00) is unique. It is generously topped with slices of A5 wagyu and complemented with ponzu mayo, pickled myoga, and yuzu kosho cream before finishing off with a drizzle of truffle oil.
Another not to be missed is their Hokkaido Scallop (S$27.00) served raw with mango sambal and more. Enjoy the sweetness from both the scallop and mango in this plate of goodness.
Not a fan of raw dishes? Their hot plate items, such as Scampi Ochazuke (S$35.00), are a must-try too. The dish is Chef Tomoyuki’s rendition of the traditional ochazuke green tea over rice. Another hot favorite is their A5 Tri Tip which is slow-cooked for six hours with a sansho spiced rub for the flavor that penetrates right through the deepest center.
For sharing platters, you can consider Bone-In Striploin (S$160.00). The 600g cut is marinated in a soy koji and glazed with a miso garlic tare before being rendered to a smoky perfection on the binchotan grill. Served with roasted vegetables and crispy kombu-truffle pressed potato pavé. We highly recommend their Buttermilk Karaage too. They deep-fried soy-marinated chicken leg, delectably spiced with umami powder and sudachi zest. Something unique to Wagatomo.
Need something yummy for lunch? Wagatomo offers donburi sets such as Don Tomo, Buta Don, Rori Don, and more made for easy, fuss-free eating on the go, and the sets even come with a house salad and Monaka dessert. The Monaka is a delicate wafer made of shiratama mochi. Layered with housemade matcha ice cream and yuzu azuki beans.
