For the sake of social media bragging rights, food establishments are reeling patrons in with visually engaging creations. From high-end restaurants to night bazaar stalls, there seems to be a growing appreciation for food that literally performs in front of you. There is the viral Dragon’s Breath dessert, flavoured biscuits tossed in liquid nitrogen, that creates the effect of smoke coming out of one’s mouth and nose, and the Goblet of Fire drink from cafe Platform 1094, which erupts in sparks with a dash of cinnamon powder. Though thrilling, these culinary gimmicks are usually short-lived, as a more stimulating variation will pop up soon enough.
