7. Pop-up at Bao Boy by Sake Central in Hong Kong

There is an upcoming pop-up at Bao Boy by Sake Central in Hong Kong. The one-night-only “Sake Jam Session” features a collaboration between Bao Boy’s Andrew Walsh and Sake Central’s co-founder, Elliot Faber. 

Diners can look forward to a selection of sakes originating from Shimane, Hiroshima, Miyagi and Ishikawa prefectures in Japan.
Hosted by Elliot Faber, who was awarded the title of ‘Sake Samurai’ by the Japan Sake Brewers Association Junior Council, guests can sample four exclusive sakes (60ml per sake) at $48++ per person.

The featured sakes are as follow:

Kakeya Junmai Muroka Nama Genshu 
Brewery: Takeshita Hoten from Shimane prefecture
Grain: Local Gohyakumangoku
Polishing: 70% polishing ratio
Profile: Rich, vibrant and savoury

Hakuko Junmai Muroka Nama Genshu Omachi
Brewery: Morikawa Shuzo from Hiroshima prefecture
Grain: Local Omachi
Polishing: 60% polishing ratio
Profile: Rich, earthy and complex

Katsuyama Junmai Ginjo “Ken”
Brewery: Katsuyama Shuzo from Miyagi prefecture
Grain: Yamada Nishiki
Polishing: 50% polishing ratio
Profile: Gently aromatic, smooth and balanced

“Tsuru No Sato” Yamahai Junmai
Brewery: Kikuhime from Ishikawa prefecture
Grain: Yamada Nishiki from Hyogo prefecture
Polishing: 65% polishing ratio
Profile: Wild, umami and complex
