Fresh Eats: New Restaurants To Check Out This Month

We are here with another list of new places for foodies to check out!

1. Cavern Restaurant

TungLok Group is launching Singapore’s first and only restaurant in a cave setting, the Cavern Restaurant, at the new Rainforest Wild Asia in Mandai Wildlife Reserve. Inspired by the UNESCO-listed Mulu Caves of Sarawak, the restaurant aims to offer a unique dining experience unlike any other in the city. Diners can expect to “dine and wine under crystalline lights reminiscent of natural cave droplets” in a space designed to evoke the ambiance of a real cave.

Officially opening on 12 March 2025, the Cavern Restaurant boasts a capacity of 158 people and will be open for lunch through dinner. The menu, curated by Head Chef Sheng Lim, features a cosmopolitan blend of international Western flavors. Beyond the unique setting and cuisine, the restaurant emphasizes sustainability. They utilize innovative mycelium leather menu covers and reclaimed teak cutlery holders and partner with alcohol suppliers using larger-volume packaging to reduce waste.

The Cavern Restaurant is designed to be versatile, catering to various occasions, from family dinners and date nights to corporate events and private celebrations. Its unique atmosphere and adaptable space make it a distinctive venue for any gathering.

2. Bon Broth Redefines Hotpot 

Chef André Chiang’s highly anticipated hotpot concept, Bon Broth, made its global debut at Raffles City, Singapore. This innovative dining experience, a collaboration with Surrey Hill Holdings, reimagines hotpot by focusing on the artistry of the broth itself.

The heart of Bon Broth lies in its meticulous broth preparation. Each hotpot is cooked to order, starting with a fresh mirepoix base sautéed and infused with Chef Chiang’s signature spice paste. This base is then deglazed with a classic French-style bouillon, made fresh daily from pure fish, beef, pork, or chicken bones, a process that takes 12 to 16 hours. The resulting rich, nourishing broth, brimming with marrow and collagen, is further enhanced with fresh herbs, aromatic spices, and condiments before being served. Chef Chiang’s vision is to return to the fundamentals of creating a pure, balanced broth so flavorful that additional condiments are unnecessary.

Bon Broth offers a curated selection of eight distinct broth flavors, inspired by Chef Chiang’s culinary journey and travels. These range from the complex Sichuan Green Pepper Signature to the robust umami of the Satay (Sha Cha) broth, catering to a diverse range of palates. Diners can enjoy these exceptional broths alongside high-quality, fresh ingredients, including seafood, meats, and vegetables.

The 2,150-square-foot restaurant features a modern and sophisticated design, including unique circular bar seating inspired by communal hotpot dining and cozy booth seating for smaller groups. Bon Broth aims to provide a warm and inviting atmosphere where exceptional flavors and a unique dining experience come together. Prices start from S$110++ for the deluxe set menu and S$138++ for the premium set menu.

Bon Broth is located at Raffles City, 252 North Bridge Rd, #03-43, Singapore 179103, and opens daily from 11am to 10pm.

3. MODU

MODU, Singapore’s first premium Samgyetang specialty restaurant, has recently opened at the prestigious Mandarin Gallery on Orchard Road. As the “Hermès” of Samgyetang, MODU elevates this traditional Korean wellness dish to a luxurious dining experience.

The restaurant specializes in boyang-sik (restorative cuisine), offering a distinctive approach to Korean health food. Their Samgyetang (from S$35++) is slow-cooked for eight hours, extracting rich flavors and nutrients from premium ingredients like ginseng, jujube, and black chicken. MODU presents six unique variations of Samgyetang, catering to diverse tastes while staying true to Korean culinary traditions. The menu also features a curated selection of exclusive Korean liquors, imported directly from Korea, perfectly complementing the dishes.

Beyond the exceptional food, MODU provides a sophisticated ambiance. The restaurant’s interior is inspired by traditional Hanok architecture, creating an elegant and serene atmosphere. Diners can choose between classic Korean counter-dining and private VIP rooms, some of which offer stunning views of Orchard Road.

Given its focus on exclusivity and intimate dining, MODU has limited seating, accommodating only 40 guests. This includes both the counter and the private VIP rooms. As a result, reservations are highly recommended, especially for the private rooms, to secure a spot at this unique culinary destination.

4. KA-MON

KA-MON, Singapore’s first restaurant showcasing three iconic Japanese grilling traditions—irori, robatayaki, and warayaki—has opened its doors at Hotel Michael, Resorts World Sentosa.

Helmed by celebrated Chef Hal Yamashita, KA-MON offers a unique dining experience, seamlessly integrating these distinct techniques within a single establishment. This innovative approach to Japanese grill dining emphasizes the purity of flavor, achieved through meticulous control of fire and heat.

The restaurant’s menu highlights premium local and imported Japanese ingredients, prepared with Chef Yamashita’s signature precision and restraint. Dishes range from delicate appetizers like soy-marinated Ajitsuke Tamago with ikura and uni, to show-stopping seafood creations like Sakoshi Bay Oyster grilled over robatayaki with shio kombu butter. KA-MON also features Tuna Wara Tataki, kissed by straw fire for a unique smokiness, and the irori-grilled Jumbo Tiger Prawn, showcasing the ancient slow-cooking technique. Meat lovers can indulge in the Aged Breast of Duck, rendered to perfection over robatayaki, or the reimagined Wagyu Beef Tartare with a quail egg yolk and papadam. Salads, like the Coriander Salad with sakura ebi, are crafted with intention.

The dining experience culminates in a theatrical Donabe, where rice is cooked in a traditional claypot with grilled fish bone dashi and fresh fish from Nagasaki.

Designed by Steve Leung Design Group, KA-MON’s ambiance blends traditional Japanese craftsmanship with modern aesthetics, featuring warm woods, bamboo accents, and open kitchen stations. With a seating capacity of 80, including a private omakase counter, KA-MON offers a refined yet approachable dining experience.

5. ANTO Pizza E Apertiv

ANTO Pizza E Aperitivi is a new culinary hotspot launched recently on Jiak Chuan Road in SIngapore. This 80-seater restaurant is the brainchild of two Pignola-born cousins: Hong Kong-based bartender/entrepreneur Giancarlo Mancino and Singapore-based Master Pizzaiolo Antonio Brancato. ANTO offers a unique dining experience where top-notch, authentic Italian pizzas meet world-class cocktails.

ANTO’s interior design features neutral tones with dark green accents, creating a casual yet sophisticated atmosphere. The five-meter bar, pizza oven, and wall of premium alcohols serve as focal points. The restaurant also features an eclectic music selection, including Italian rap and hip-hop.

The menu at ANTO focuses on three types of pizza: in teglia (baked in a tin), classic Neapolitan, and Le Antonio, a creative selection of signature pizzas. Master Pizzaiolo Antonio Brancato, with 16 years of experience, uses Molino Dallagiovanna flour from Northern Italy and homemade tomato sauce made with fresh Italian tomatoes. Highlights include the Rocco (S$24++) in in teglia style, a simple yet flavorful pizza with potatoes and rosemary. The Rustica (S$38++) is another popular choice, featuring salsiccia fresca, smoked Scamorza cheese, and radicchio. Vegetarian and vegan options, such as the Caponata, a vegan Neapolitan pizza with Sicilian-style agrodolci, are also available.

Complementing the pizzas is a diverse cocktail menu curated by Giancarlo Mancino. The drinks list is categorized into seven sections; this includes classics with a twist, Negronis, non-alcoholic options and Spritzers. The innovative Pineapple Pizza Negroni (S$25++) is a standout creation, a Bianco Negroni-style drink with pineapple gin, ham, tomato bitter, and freeze-dried mozzarella. Other notable cocktails include the Classico (Anfora) (S$25++) and the non-alcoholic Belli-No. The restaurant also offers a wide selection of beers and wines that pair well with the pizzas.

6. Siong Tong Gai

Siong Tong Gai, a popular Malaysian seafood restaurant chain with 11 outlets across Malaysia, has finally opened its first international location in Singapore.

Known for its fresh seafood, innovative Chinese dishes, and affordable prices, Siong Tong Gai has garnered a reputation for drawing long queues of eager diners. The new Singaporean outlet is located at 313@Somerset, bringing their signature flavors to a new audience.

The menu features iconic dishes like the Steam Three Treasures with Steamed Fish (a flavorful seafood medley in a special broth) and the crispy Fried Prawns with Soy Sauce (S$28.80++). Beyond these classics, Siong Tong Gai is also introducing new chef creations exclusive to the Singaporean location. These include dishes like the Stir-Fried Pork with Green Pepper (S$18.80++) and the Golden Crispy Chicken Drumettes (S$18.80++), offering diners a wider range of culinary experiences.

7. Fu Hui Gen Tang (福慧根汤)

Fu Hui Gen Tang (福慧根汤), a renowned 40-year-old Taiwanese specialty soup restaurant, has recently opened its first international location in Singapore.This popular culinary wellness destination, frequented by Taiwanese celebrities and politicians, offers a unique dining experience centered around its signature herbal soup. The restaurant emphasizes the rejuvenating, immunity-boosting, and detoxifying benefits of its carefully crafted broth, which is based on a traditional Chinese medicine recipe originally designed for emperors.
>The heart of the Fu Hui Gen Tang experience is its signature soup, a complex concoction of 50 traditional Chinese medicinal herbs. A TCM practitioner developed the recipe following ancient principles and a unique “nine steaming and nine sun-drying” preparation process. This meticulous method maximises the herbs’ potency and ensures optimal absorption by the body. Intriguingly, the same soup can taste different to each individual, reflecting their unique physical and emotional state. This personalized experience adds an interactive element to the dining experience.

Fu Hui Gen Tang offers individual set menus and à la carte options. The introductory price for the individual set menu, which includes three bowls of Fu Hui Gen Tang (chicken), several side dishes, and dessert, is S$108+ per person (U.P. S$118+) until 31 March 2025. The soup is available in original, chicken, and mushroom variations, with prices ranging from S$188+ for 2 pax to S$428+ for 4 pax.

8. En Yeoh’s Bak Kut Teh (宴杨肉骨茶)

En Yeoh’s Bak Kut Teh, a new dining concept by EN Group in collaboration with the renowned Klang brand Yeoh’s Bak Kut Teh, has already launched. This unique establishment operates as a traditional Bak Kut Teh teahouse during the day. While transforms into a vibrant oriental cocktail bar by night.

During the day, En Yeoh’s Bak Kut Teh focuses on serving the classic Klang-style Bak Kut Teh. Featuring a rich, herbal broth simmered with a closely guarded recipe of ingredients like garlic, star anise, angelica root, wolfberry, and Chinese licorice roots. Guests can enjoy various Bak Kut Teh options. From individual bowls like the Pork Sweet Intestines Bak Kut Teh (S$8.50+) and Pork Trotter Bak Kut Teh (S$8.90+) to clay pot specialties like the Signature 4 Types Assorted Meats Claypot Bak Kut Teh (S$10.90+ single/S$18.90+ two pax). There is also the unique Claypot Seafood Bak Kut Teh (S$19.90++) for seafood lovers. It features red sea prawns, black cod, and clams. A dry version of Bak Kut Teh is also available. With choices like Claypot Dry Pork Belly Bak Kut Teh (S$12.90v) and Claypot Dry Assorted Seafood Bak Kut Teh (S$19.90+). The menu also offers a selection of braised dishes, sides, and rice/noodle options. Including the Dry Pork Belly Bak Kut Teh Sanuki Udon (S$14.50+).

As evening approaches, En Yeoh’s Bak Kut Teh transitions into a stylish bar, offering a curated selection of alcoholic beverages. These include beers, Chinese Baijiu, highballs, and innovative Bak Kut Teh-inspired and Baijiu cocktails. The bar also features unique cocktail creations like the Warm Your Heart and Stomach ($20.00+ serves 2 to 4 pax), a warm cocktail made with Bak Kut Teh broth, Mao Tai Chun, and Nu Er Hong. Desserts like Mao Tai Ice Cream ($6.00+) and Hai Zhi Lan Ice Cream ($5.00+) provide a sweet ending to the dining experience.

En Yeoh’s Bak Kut Teh aims to offer a taste of tradition during the day and a modern, exciting atmosphere at night, catering to a wide range of diners.

9. DIMPLE

DIMPLE, a new craft cocktail bar, has recently opened in Singapore’s vibrant Purvis Street neighborhood in Bugis. This intimate space offers a cozy and welcoming atmosphere. Emphasizing personalized service and aims to bring people together over expertly crafted drinks and Hong Kong-inspired snacks. Headed by veteran Singapore cocktail scene bartender Marcus Liow, DIMPLE promises a unique experience.

The bar’s menu boasts 14 signature cocktails (S$25++), each meticulously prepared using fresh, seasonal ingredients. These cocktails draw inspiration from Chinese principles such as Love, Harmony, and Abundance. They are often expressed through fruity flavor profiles. Beyond the signature creations, DIMPLE also offers classic cocktail favorites that ensure diverse options for every palate.

10. Bateel Boutique
