1. SUSHISAMBA and HighHouse Featuring Exciting Collaborations

SUSHISAMBA and HighHouse are set to deliver a series of vibrant and exclusive culinary and cocktail experiences against the city’s stunning skyline. HighHouse is going to kick off the festivities on 28 March 2025 with “Coast to Toast: Taipei Edition”. This is a guest shift and party crossover featuring KOR Taipei. This event will showcase innovative cocktails crafted by KOR’s head bartender, Tim, and the bar manager, Ziyi, accompanied by DJ Mr Gin and KONG music. You can expect a lively atmosphere, as KOR Taipei is known for its celebrity-favored, award-winning cocktail creations and collaborations with top chefs and bartenders.

Following HighHouse’s event, SUSHISAMBA will host a Peruvian culinary takeover from 31st March to 2nd April 2025, partnering with Michelin-recognized Mission Ceviche from New York. Guests can participate in a Ceviche-Making Masterclass with a 3-course lunch, priced at S$128++ (includes a welcome drink and branded apron). For an elevated dining experience, SUSHISAMBA will also offer a 6-course, 4-hands dinner prepared by Chefs Paul Hallett and Jose Luis Chavez, priced at S$248++, with an optional wine pairing at S$168++. This dinner will feature a fusion of SUSHISAMBA’s signature flavors and Mission Ceviche’s modern Peruvian cuisine, complete with live entertainment including samba dancers, DJs, and percussionists. Some of the dinner highlights to watch include dishes like Alaskan King Crab Taquitos, Double Toro Sushi, and Hokkaido Uni Ceviche.

2. Sky22’s High Tea for Two

Sky22 is set to launch an elevated afternoon tea experience , “High Tea for Two”. This daily offering, available from 3:00 PM to 5:00 PM, promises a sophisticated and refined culinary journey, showcasing the skill of Head Chef Chris Lee, a pastry expert with two decades of experience. The afternoon tea will feature rotating monthly themes, ensuring a fresh and inventive experience with each visit.

The initial theme for March 2025 will highlight the vibrant flavors of seasonal berries. Guests can anticipate a delightful array of sweet treats, including strawberry lychee and basil mousse, summer berry burnt cheesecake, lemon strawberry madeleines, and classic scones accompanied by berry jam and Chantilly cream. The savoury selection will feature miniature culinary masterpieces such as Cornish or Chicken pie with morel cream, smoked salmon tea sandwiches, a caprese-inspired kuih pie tee, and goat cheese, honey, and fig bruschetta.

The “High Tea for Two” experience is priced at S$48++ for two persons and includes free-flowing coffee or a selection of classic teas like English Breakfast, Earl Grey, and Jasmine Green Tea, among others. Guests can enjoy these treats while taking in the panoramic views of Singapore’s skyline through Sky22’s floor-to-ceiling windows, creating a memorable afternoon.

3. Affordable Taiwanese Izakaya with a Twist – Jiak Bar

Jiak Bar, a new venture by Jiak Ba Food Heaven, has recently opened its doors. It promises a unique izakaya experience with a focus on affordable and innovative Taiwanese cuisine. This new hotspot aims to provide a relaxed, post-work unwind destination, offering a menu that starts at a remarkably accessible S$3.80. The bar introduces unexpected twists on familiar Taiwanese flavors, creating a buzz with items like the Crunchy Spiced Pig’s Ear and the inventive Three Cup Century Egg, a deep-fried rendition of the classic dish.

The menu also features comforting soups, including the Naked Pepper Chicken Soup and the intriguing Pineapple & Bitter Gourd Soup, which balances sweet and bitter notes. The popular Golden Kimchi is also available, providing a tangy and spicy kick. For those seeking a more robust and fiery option, the Claypot Mala Tofu Stew is a standout, featuring tofu marinated in Taiwanese Jin Xuan Tea and braised for over 24 hours. This process ensures a rich, aromatic flavor profile, offering a warm and spicy experience.

Complementing the food is a selection of pocket-friendly cocktails, all priced under S$10. Highlights include the Drunken Boba, a boozy take on Taiwan’s famous milk tea with whisky and umeshu, and the Warm Red Date Wine, a smooth, spiced cocktail featuring Plume Wine. 4. El Chido at Pullman Singapore Hill Street Unveils New Menu

El Chido at Pullman Singapore Hill Street has unveiled a revamped menu emphasising creative Mexican cuisine and innovative cocktails. Perched atop the hotel, this rooftop bar offers panoramic views of Singapore’s skyline, creating a vibrant and lively atmosphere.

The new menu, curated by Executive Sous Chef Hong Dingzhao, showcases a fusion of traditional Mexican flavours with local Singaporean influences. Dishes like the Chicken Rice Chimichanga and Breaded Fish Otah Tortilla exemplify this unique culinary approach.

Bar Manager Riot Gurvinder’s cocktail menu complements the food with inventive concoctions that blend Mexican inspiration with global influences. The Clarified Strawberry Mojito and Dáli are examples of the bar’s commitment to crafting unique and engaging drinks.

5. Chef Dharshan Munidasa Unveils “Ultimate Hokkien Mee” at Ministry of Crab Singapore

Chef Dharshan Munidasa, renowned for his culinary expertise at Ministry of Crab, has unveiled his “Ultimate Hokkien Mee,” a dish born from a deep-seated personal connection to Singaporean cuisine. During his early career, his frequent travels between Sri Lanka and Japan fostered a love for Hokkien Mee, which he would savor before night flights. This cherished memory has now materialized into a unique culinary creation.

The “Ultimate Hokkien Mee” (S$75++) is a luxurious reimagining of the classic dish, centered around the prized Sri Lankan Giant Freshwater Prawn, or “Prawnzilla.” Munidasa’s dedication to purity and natural flavors is evident, as the dish is crafted without MSG, artificial seasoning, or pork lard.

A carefully perfected broth rich in umami, is extracted from a whole Prawnzilla weighing over 500g, incorporating the coveted prawn liver for an intense oceanic sweetness. The noodles, a blend of yellow noodles, thick and thin vermicelli, are wok-fried to achieve a robust “wok hei” and then simmered in the prawn broth. Crispy, deep-fried prawn bits are added just before serving, enhancing the texture and flavor.

Given the meticulous preparation, including using a large prawn and crafting of the rich broth, each order takes approximately 60 minutes to prepare. The dish launched exclusively at Ministry of Crab Singapore, inviting diners to experience Munidasa’s refined interpretation of Hokkien Mee, a testament to his culinary journey and commitment to showcasing the natural flavors of premium ingredients.

6. Singapura Heritage Opens New Delicious Space at Pasir Ris Downtown East @ E!AVENUE

Singapura Heritage has unveiled a new dining space at Pasir Ris Downtown East @ E!AVENUE, aiming to consolidate the essence of Singapore’s vibrant hawker culture under one roof. This food hall has drawn inspiration from Singapore’s UNESCO-recognized hawker heritage, providing a nostalgic 1980s ambiance where diners can indulge in a diverse array of local culinary delights. The grand opening is set for 14th March 2025, and will operate daily from 10am – 10pm.

The venue boasts a curated selection of popular hawker stalls, each offering signature dishes that have garnered a loyal following. Mui Siong Bak Chor Mee stands out with its meticulously prepared pork liver, while Zhong Zhong Wu Xiang presents a variety of flavorful fried five-spice rolls and accompaniments. Rong’s Wantan Noodle features handmade springy egg noodles, and Heng Heng Hainanese Curry Rice offers a rich and satisfying curry experience. Zhen Jie Prawn Noodle provides both soup and dry versions of this beloved dish, with a particularly potent umami flavor in its dry rendition. Complementing these local favorites is Kenny Rogers Roasters Express, which adds a Western touch with its rotisserie-roasted chicken and fried chicken options, including unique flavors like Korean Soy Garlic.

This new Singapura Heritage space caters to a wide range of palates, ensuring that visitors can enjoy their favorite hawker dishes in a convenient and comfortable setting. The focus on authenticity and quality, combined with the nostalgic atmosphere, aims to create a unique dining experience that celebrates Singapore’s rich culinary heritage.
