Canchita Peruvian Cuisine is celebrating the Lunar New Year with the return of its beloved Chifa Peruvian-Cantonese dishes for the fourth consecutive year. Available throughout January 2025, the special menu features seven seasonal dishes inspired by Peru’s Cantonese cooking traditions.
Chifa cuisine blends Cantonese cooking techniques with Peruvian ingredients and flavors, reflecting the influence of Chinese immigrants who arrived in Peru in the 19th century. Canchita’s menu draws from the personal experiences of Chef Daniel Chavez, whose grandfather was Cantonese. Chef Daniel and his wife, Chef Tamara, even traveled to China to deepen their understanding of Cantonese cuisine.
Canchita’s Lunar New Year menu features a vibrant array of Chifa dishes. Indulge in the Lo Hei & Crunchy Tacos (S$72++) a festive yusheng with golden corn tortillas. Savour the Ceviche Canton (S$32++) a unique take on ceviche with ginger-infused Tiger’s Milk. Enjoy the Salad of Good Luck (S$24++), a vegetarian delight. The Octopus Yu Sheng reimagines the classic dish with a Sichuan twist. Featuring a Yu Xiang (鱼香) dressing that balances sweet, sour, spicy, and savory flavors, it’s topped with crispy Ma Hua flakes for added crunch.
