Tóng Lè Private Dining Hosts Its Sophomore Niigata City Food Fair

Savour the taste of an authentic Japanese Autumn

Situated along Japan's scenic northwest sea coast, Niigata City is home to a rich variety of seafood in Japan. Aside from its geographical advantage of being close to the sea, Niigata also happens to be the largest global rice producer in Japan - the very rice that contributes to the lauded repute of the country's sakes and sushi.

From now till 11 November, Tóng Lè Private Dining is bringing the best Autumn's season produce from Niigata City to Singapore. Here are our favourites from the exquisite six-course meal:

3. Uonuma Rice 

Uonuma is a city located in South Central Niigata Prefecture, famous for producing the best Japanese rice Koshihikari. The crown jewel of Japanese short-grain rice, Koshihikari, is noted for its sweet and nutty taste with a little bit of stickiness.

For this dish, the short-grain rice is first cooked and reduced in chicken stock before encased, together with deep-fried mountain yam cubes, in yam paste to form a palm-sized ball. Crispy uonoma rice, shallots and trumpet mushroom bits are then sprinkled over.In an act of gastronomic ingenuity, the chef placed a pepper crusted Hokkaido scallop on top.

As a grand finale, just when we thought we could tuck in after snapping a million pictures, a delicious seafood soup is poured into the bowl, and our tastbuds couldn’t be more satisfied with how it turned out.
