Steamed Pudding made using New Zealand Rockit apples
Ingredients
5 Rockit apples
½ cup sugar
1 pinch ginger powder
1 pinch nutmeg
1 pinch cloves
200 g butter
200 g soft brown sugar
3 free range eggs
50 g molasses
350 g all-purpose flour
2 tsps baking powder
Directions
- Peel and quarter the apples
- Caramelize the apples with sugar till soft and arrange in the floured and buttered molds
- Cream the brown sugar and butter, slowly add the eggs
- Fold in all dry ingredients and spices and finally the molasses, mix until well combined
- Place batter on top of the apples to fill the mold 3/4
- Cover with foil and steam for 8-12min or until a skewer comes out clean
- Serve with NZ Ice Cream
