French patisserie Antoinette has come up with a festive bun for the Lunar New Year season, made using a unique combination of French and Japanese bread techniques for a soft and bouncy texture. The bread itself is infused with red dragon fruit juice—with pork floss being an important component of the filling, it is also stuffed with house-made “nian gao” including fried shallots, salted egg and candied yam.
