6. Shio Patisserie
The relentless pursuit of building a diverse portfolio of exemplary brands has led The Denzy Collective founders Damien Yau and Hao Zhen to launch Shio Patisserie, serving handcrafted quality pastries. Having toyed with the idea of expanding Denzy’s dessert beyond gelato, the spark came alive in a late-night discussion with Denzy’s R&D Head and now, Pastry Chef – Sherlynn Teo.
Translated from Japanese, Shio (しお) refers to ‘salt’. The brand believes that salt is a natural but crucial ingredient in baking, elevating and giving rise to well-rounded flavours. Stemming from Sherlynn’s past experimentations and learnings that baking is both a science and an art, she prides herself in crafting pastries with the “right amount” of ingredients – not a gram more, not a teaspoon less. She currently helms the creative direction at Shio Patisserie, demonstrating her expertise in Denzy’s new foray into the pastry world.
