For three nights only, one of Australia’s most celebrated pizzerias is heading to Sentosa for a special collaboration with Fiamma at Capella Singapore.
Singapore’s dining calendar gets a distinctly Italian addition this September when Melbourne pizzeria SHOP 225 makes its Singapore debut at Fiamma, Capella Singapore, from 24 to 26 September 2026.
The three-day residency forms part of Fiamma’s In Good Company series, an ongoing programme that brings notable restaurants and culinary personalities from around the world into the Capella Singapore kitchen. Previous editions have featured Singapore’s Fortuna Trattoria and Michelin-starred Glicine; this time, the focus shifts to pizza.

SHOP 225 has earned a formidable reputation in Australia’s Italian dining scene, taking the title of Best Pizza in Australia and placing No. 28 in the world in the 50 Top Pizza rankings. For its Singapore appearance, the Melbourne restaurant will bring a selection of the pizzas that have helped build that reputation, served within the relaxed, rustic setting of Fiamma.

A Melbourne Pizzeria with Italian Roots
SHOP 225 was founded by Lorenzo Tron around an uncomplicated idea: food should make people feel welcome.
That sentiment runs through the restaurant’s approach to pizza. Rather than treating it simply as a dish, SHOP 225 sees pizza as part of Italian culture — something inherently social, familiar and meant to be eaten around a shared table.
Its cooking remains grounded in the techniques associated with traditional Neapolitan pizza: carefully prepared dough, considered fermentation, quality ingredients and the intense heat of the oven. Yet the restaurant is equally known for making that experience accessible to diners with different dietary needs.
Alongside its conventional menu, SHOP 225 has developed options for coeliacs, vegans and guests seeking halal-conscious choices, without relegating them to an entirely separate dining experience. Inclusivity, in this case, is part of the restaurant’s philosophy rather than an afterthought.
It is a natural fit for Capella Singapore, where the In Good Company series has increasingly become less about simple chef appearances and more about bringing together restaurants that share a commitment to hospitality.

Five Pizzas to Look out For
The Singapore menu will feature several SHOP 225 signatures, ranging from traditional combinations to decidedly more luxurious interpretations.
For purists, there is the Margherita con Bufala, where the emphasis remains on the fundamentals: tomato, buffalo mozzarella and a properly cooked base.
Those looking for something richer can turn to the 2807, layered with mushroom cream and pork sausage, or the Zio Pino, which places truffle flavours firmly at the centre of the experience.
Seafood appears in the Bianca Gamberi, while the Wagyu Bresaola adds a more contemporary, indulgent dimension to the line-up.
Together, the selection offers a useful snapshot of SHOP 225’s style. The pizzas remain recognisably Italian, but there is room for more expressive toppings and unexpected combinations alongside the classics.
