4. Hanazen by Yusuke Takada
The founder of 2-Michelin-starred & World’s 50 Best Restaurant La Cime in Osaka will showcase Japanese techniques married with French flair using local ingredients paying homage to Singapore at Hanazen. At Hanazen in Singapore, expect the smoky char of traditional Japanese charcoal-grilled dishes imbued with an innovative French touch.
The restaurant will feature just a single omakase dinner menu. The highlight of the charcoal-grilled Omakase is the expertly executed grilled skewers served with specially created sauces for each creation. For instance, savoury chicken liver is served with a white wine raisin sauce, in a classic French pairing to bring out its depth of flavours. A skewer of Awabi abalone and chicken gizzard is meticulously prepared so that the prized abalone is tender but bouncy to the bite, while finished with a caramelisation from bincho-tan. The dish is served with gyoja-ninniku (garlic chives) butter to complement its flavour.
Another dish inspired by Singapore is the Coconut Flan, a savoury and creamy pandan rendition studded with seasonal Hamaguri clams from Japan, lending their chewy, tender textures and gentle sweetness. The dish is layered with the crunch of bread tuile and nanohana buds from the rapeseed plant, and finished with caviar for brininess.
