3. iKKAGOYO
iKKAGOYO, inspired by a Japanese proverb that translates to ‘one flower opening up to five petals and will bear fruit soon’, has recently opened its doors along Amoy Street. Helming the kitchen is Chef-Owner Mitsutaka Sakamoto, 42, from Hyogo, Japan.
Practising kodawari or ‘the uncompromising and relentless pursuit of perfection’, Chef Sakamoto is fastidious about the producers and artisans he works with, leaving no stone unturned to hand pick and coordinate every ingredient, crockery, cutlery and kitchen utensil he uses. The prix fixe menu (S$338++ per person) of 12 intricate courses showcases Chef Sakamoto’s finesse and flair, all presented harmoniously on carefully-selected tableware, with select courses prepared a la minute in front of the diner. True to its ethos of offering an unparalleled experience, the restaurant prides itself in importing all its ingredients from Japan, with the exception of select seasonal products such as truffles.
While you are there, give their pristine and deftly-sliced otoro and buttery-fleshed Spanish mackerel with aromatic aburi-style skin a try. Diners may also choose one of three options that highlight the Konotori-mai – katsuobushi and raw egg don with soy sauce on the side, maguro sashimi don topped with fresh wasabi, or a sizzling bowl of gyusuji (beef tendon) and beef brisket in a soy-based broth with rice on the side.
