3. Abura Kappo at Hashida Singapore

Hashida Singapore unveils the Abura Kappo, a restaurant-within-a-restaurant concept helmed by Chef Kenjiro “Hatch” Hashida. Chef Hashida and his team spearhead inventive culinary masterpieces revolving around the essence of oil. The debut menu, Abura Kappo Vol. 1, heralds the start of this unique dining journey.

Crafted by Hatch’s adept team, Abura Kappo Vol. 1 features a sequence of 13 extraordinary bites. Among the highlights is a unique rendition of Tebagyoza, reinterpreting the classic chicken and egg combination of oyakodon. In this variation, deboned chicken wing envelops glutinous rice and egg, served alongside an oyako sauce. The Soft Soba Taco showcases a specially crafted buckwheat tortilla, a secret recipe by Hatch, housing minced Wagyu cutlet, pillowy tofu emulsion, and shungiku sauce reminiscent of sukiyaki elements. Additionally, the Oden Tempura pays homage to a Japanese staple, where radish and tomato are dashi-stewed and then crisply deep-fried to a golden hue.
