Only on the Nation’s birthday of 9 August, Barcelona-born Head Chef Carlos Montobbio is set to give Esquina’s sought-after Spanish fare a bit of local flair with the Laska Paella with Carabinero Prawn and Cuttlefish ‘Tagliatelle’ ($32). As the name suggests, Spain’s classic rich dish of paella is infused with the aromatic profile of hawker favourite laksa, further elevated by lobster and fish stock to soothe the soul. Paired with a single sweet Carabinero prawn, the fusion dish still bears resonance to the laksa creation, indicated by the way the yellow noodles and cockles are swapped out for squid pasta and mussels respectively.
