By Nicole-Marie Ng

Juicy burgers, seared steaks, smokey chicken wings – there are so many reasons to love holding a barbecue.

Unfortunately, for many of us, the convenience of grilling at home is lost because we live in a high-rise building.

However, unleashing your inner Bobby Flay can now be a reality with portable grills that can fit easily
on balconies and rooftops. Here’s the lowdown on urban cookouts that anyone with a pair of tongs and a couple of kilos of prime cuts can achieve.

1. Choose the right grill

Max out that gorgeous balcony by holding a mini pig out with the compact Weber Kettle. Perfect for local faves like banana leaf-wrapped sambal stingray or even a spice-free version with cod. Infuse your barbecued dish with charcoal smokiness with this kickass grill.

Weber’s signature lid-down cooking also reduces the amount of smoke emitted, great if you don’t want your entire home to smell, especially the clothes lying in your wardrobe.

2. Go biodegradable

Love grilling and hosting parties but hate cleaning up? Corn Ware from Olive Green is a disposable plate and cutlery brand that is 100% biodegradable. The affordable and eco-friendly alternative to traditional plastic ware is also toxic free and microwavable.

Available from major supermarkets.

3. Use premium meats and seafood

When cooking at home, you can afford to have a messy feast. This means that crabs, prawns, and other foods which are normally eaten by hand are no longer off limits.

Steaks and burgers are also a must at a barbeque. Step it up a notch and impress your guests with A5 Matsusaka Wagyu Beef, one of Japan’s top three beef grades. The marbled piece of meat will easily melt in your mouth and coat it with its rich, buttery flavour.

Available from Jones the Grocer.

4. Turn on the fan

For better ventilation, make use of the portable fans you have around the house by placing them near the grill. Aim the wind away from your home so that the smoke does not linger in the apartment.

5. Put safety first

As with cooking in the kitchen, an open flame is always a fire risk. Make sure you have an emergency fire extinguisher on hand should the flames or smoke get out of hand.
