The homegrown bakery has unveiled five new breads, in collaboration with award-winning Taiwanese Chef Johnny Chen

Chef! What have you been busy with?
I’ve been working with BreadTalk to prepare for the launch of the new Masterpiece Premium Collection, called ‘Flavours of Jubilation’.
The range carries three of my award-winning breads that I made for the 2015 Mondial du Pain, where I was crowned champion, as well as two breads that are inspired by flavours that are distinctly Singaporean.
It’s been a very exciting and enriching experience, collaborating with the talented international chefs at BreadTalk, immersing myself in Singapore’s culture and learning about her history.
It was during my last visit to Singapore that I was inspired to create a bread sculpture to commemorate my collaboration with BreadTalk and pay homage to Singapore.
The 1.2 metre tall sculpture, named The Voyage to the World symbolizes strength, bravery and magnificence and perfectly epitomizes Singapore’s birth from a fishing village to its vibrant port that it is now globally known for.
I devoted almost a month of after-work hours, sleepless nights conceptualizing and experimenting with it and I am very happy to complete this sculpture live at BreadTalk Paragon on 1 Oct between 4 to 6pm. It will remain on display for two weeks.
