Fresh off a top-six finish at the 2025 Bocuse d’Or and crowned the top Asian finalist, Chef Mathew Leong returns with a limited-time collaboration aboard Cable Car Sky Dining.
Start with a welcome tipple at The Mirabilis Bar @ Mount Faber Peak, then board a private cabin for two scenic rounds—about an hour—along the Mount Faber Line to enjoy a starter and main 100 metres above sea level, with dessert closing at Arbora Café @ Mount Faber Peak.
The bespoke menu leans Nordic-meets-Asian: Kombu-Cured Tuna Chutoro uplifted by Löjrom and horseradish-buttermilk-jalapeño brightness; an open-fire grilled Japanese Wagyu Sirloin kissed with yuzu-kosho beef jus; and an Oolong Tea Milk Ice Cream perfumed with citrus and lavender, given a playful tingle with Szechuan pepper crisp.

4. Manchu-Han Imperial Feast at Man Fu Yuan
For two nights only, InterContinental Singapore’s Man Fu Yuan presents a rare Manchu-Han Banquet Cuisine showcase, tracing its lineage directly to the Qing imperial court. Executive Chinese Chef Aaron Tan—formally appointed disciple of Master Chef Qi Jinzhu—joins forces with his mentor to unveil more than 20 intricately prepared dishes, following the traditional sequence of this legendary feast, beginning with a Cantonese tea ceremony.
Expect highlights such as the Auspicious Cold Platter featuring Braised Duck Gizzard, Beef Shank and Wasabi Pork Tripe; The Phoenix Returns to the Nest, a delicate double-boiled bird’s nest with chicken mousse, Jinhua ham and white fungus; Kun Lun Abalone gently braised with nearly two metres of dried grouper skin; and the ingenious “Orchid Bear Paw,” a masterful recreation of the coveted texture through layered pig skin, minced pork and beef tendon. 5. Bangkok’s Stella Pops Up at Capella Singapore
Capella Singapore’s “Constellation of Cocktails” series returns—this time in collaboration with Capella Bangkok, crowned The World’s Best Hotel 2024 — for a two-night (7 and 8 November 2025) takeover helmed by Bars Manager Miriam Nini.
Stella’s “Journey into the New Siam” menu lands at The Pineapple Room from 5:30 pm to 11 pm, featuring cocktails priced at S$28++ each. Expect layered storytelling in every glass:
– Siam 5.0 marries Nikka From The Barrel with Rémy Martin VSOP, oak smoke, and fermented Thai honey.
