The Lighthouse Restaurant at The Fullerton Hotel Singapore is welcoming Chef Ettore Bocchia of one Michelin-starred Mistral Restaurant for a guest shift from 12th to 16th November.
Some key dishes that he will be bringing to The Lighthouse include:
1. Sicilian Red Prawns paired with nitrogen-frozen guacamole ice cream and coconut cream
2. Antonius caviar served with raw scampi, sweetened with red Sicilian prawns and rounded off with fennel cream
3. Cold spaghetti folded with Antonius caviar is served with fluffy Alaskan King crab flesh and rich Caprino cheese sauce
4. A dessert of Antonius caviar with white chocolate and nitrogen frozen gin and tonic ice cream
