Now that the situation for Covid has improved, more restaurants in Singapore are slowly opening up and crowds are seen coming in.

Japanese cuisine is well-loved by Singaporean for its quality and ingredients. Today, we are going to talk about a hidden gem that we have recently discovered – Unkai Sushi. Unkai Sushi serves Japanese omakase made with premium seasonal ingredients.

With 12 years of passion and experience at various prestigious Japanese restaurants including hiding Yamamoto and Ashino,  Chef Eugene Lam aims to bring you an intimate epicurean experience steeped in age-old Japanese tradition.

Other than omakase, the 30-seater restaurant also offers sashimi, sushi as well as comforting rice bowls that celebrate seasonal ingredients and Chef Eugene Lam’s creativity.

Affordable Omakase

Unkai Sushi offers three omakase options, at affordable prices of S$88++, S$138++ and S$188++. Tuck into ingredients specially air-flown from Japan, each carefully preened, pruned and presented by the skilled hands of Chef Eugene. All three options feature appetisers, sushi, soup and dessert, accompanied by variations of grilled dishes, sashimi, handroll and hot dish rotate depending on the seasonal menu.

Chef Eugene is very particular when it comes to ingredients. He only uses only rice from Hokkaido in the making of his menu – the nanatsuboshi and yumeipirika. With a combination of quality and sweeter Japanese price on top of fresh seasonal seafood, you are only served the best when you dine in at Unkai Sushi. Even their foods are also imported directly from Japan!

Chef Eugene seasons the rice in two distinct manners depending on the fish or seafood –  Rice pairing with white fish is seasoned with white vinegar while rice pairing with red meat and fattier fish gets a dressing of red vinegar to pull out the flavours of the ingredients.

We were sold when we tried Chef Eugene’s special House-Smoked Otoro to really appreciate the taste and texture of fish and rice.

Ala Carte Options

Other than omakase, you can also have the option to go for Chef Eugene’s ala carte menu. Try his Signature Soba which is exclusively made by artisanal soba makers for Unkai Sushi and tossed in his house-made sauce. Other must-tries include their Pork Cheek Bowl which is slow-cooked for 12 hours and Anago Tempura, made with premium eel, deep-fried into golden tempura before being finished off with yuzu zest for a touch of brightness.
