9. Zaferrano
Available from 1 to 30 December 2018, the Christmas Chef Menu showcases six courses ($118.00 per pax) of contemporary renditions of the Chef Emanuele Faggi’s favourite festive dishes. The dinner commences with the enticing foie gras terrine with nougats and pomegranate, followed by pine-smoked salmon with persimmon and walnuts. The menu continues with scampi and amaretto biscuit bottoni ravioli with cabbage cream.
The mains include Mediterranean turbot fillet with saffron sauce; and succulent Capon filled with dates, prunes and chestnuts, taro potatoes served with candied fruit in mustard-flavoured syrup. The dinner ends on a sweet note with an alluring ‘panettone’ bread cake with ‘vin-brûlé’ sorbet.
