2. Experience an Exclusive Wood-Fire Collaboration at Butcher’s Block
Meat lovers and fine-dining enthusiasts are in for a rare treat as Butcher’s Block at Raffles Hotel Singapore hosts an exclusive two-day wood-fire collaboration. Chef Jordan Keao welcomes guest Chef Yong-Wook Yoo, founder of Seoul’s IMOK Smoke Dining and famously known as the “Barbeque Lab Director” on Season 2 of Netflix’s Culinary Class Wars. Together, the two chefs present a thoughtfully curated six-course dining experience that blends Chef Jordan’s Hawaiian sensibilities with Chef Yoo’s modern Korean smokehouse style.
The menu highlights open-fire craftsmanship and whole-animal butchery, showcasing the culinary traditions of both cultures. Standout dishes include Jeju Korean Pork, which presents premium white pork in two distinct styles: IMOK’s pork loin marinated in Korean anchovy paste, paired with Butcher’s Block’s Hawaiian kalua pork belly. Another highlight is Chef Yoo’s Smoked Beef Short Rib, served with garlic-chilli purée, chimichurri, wholegrain mustard, and silky bone marrow custard.
For dessert, guests can look forward to Burnt Ice Cream topped with makgeolli froth, candied bellflower root and black sesame mochi. With IMOK Smoke Dining being highly sought-after in Seoul, this exclusive collaboration offers a rare opportunity to experience Chef Yoo’s signature dishes in Singapore.
