Chef Mauro Colagreco celebrates the dawn of spring with fresh produce such as asparagus, fava beans and artichokes while incorporating traditional Italian cooking techniques that pay homage to his culinary journey. The new menu presents an array of dishes reminiscent of a homecooked Italian meal, from antipasti to desserts, each of which is crafted to perfection using the season’s harvest.
Look forward to rich and flavourful antipasti such as Burrata Primavera served with seasonal fava beans and peas, Asparagi Verdi Alla Griglia, Tortellini Panna Prosciutto e Tartufo and more. Pizza aficionados can choose from Calzone Napoletano, a traditional Neapolitan pizza folded over and filled with sausage, eggplant, Provolone del Monaco cheese, and tomato sauce, or Costiera features a medley of seafood including prawns, mussels and squid, atop a crispy pizza crust. Enjoy handcrafted desserts such as Delizia al Limone, a refreshing lemon cream, ice cream and yoghurt espuma enhanced by the delicate taste of honey, and Lemongrass Maritozzo, a sweet and fragrant lemongrass cream-filled bun.
