Whip Up A Feast For Father’s Day With These Quick Recipes

Jasmine and Melissa HemsleyCourgette and Egg Salad

Fresh, delicious and easy to prepare, this salad by the Hemsley sisters is perfect for a light meal or as a starter for a festive dinner.

Serves 1

Preparation Time: 5 Minutes

Cooking Time: 10 Minutes

Ingredients

  •  One courgette (Zucchini)
  • A handful of pumpkin seeds
  • Celtic sea salt or Himalayan salt
  • Fresh ground black pepper
  • Cold pressed Extra Virgin Olive oil
  • Quality balsamic vinegar
  • 1 Egg
  • 1 tbsp Coconut Oil

Method

  1. Toast the pumpkin seeds in a dry frying pan over medium heat, shaking the pan every minute or so until the seeds are golden and start to puff up and jump around the pan
  2. Melt the coconut oil in a frying pan over a low heat and, when hot, crack your egg into the pan to fry
  3. Meanwhile, rinse your courgette, wipe it dry and grate into a mound on a plate
  4. Top the courgette with your seeds, fried egg and drizzle over the oil, vinegar and sprinkle with salt and pepper.
