Recipe: Salted Egg Soft Shell Crab By Asian Food Channel

Forget about chili crab and black pepper crab, here’s a quick and easy recipe for this popular seafood dish that’s captured the hearts of many!

Ingredients

Serves 4-5 people

  • 5 soft shell crabs, cleaned
  • 4 salted egg yolks, steamed and mashed
  • 15 curry leaves
  • 8 cloves garlic, chopped
  • 3 chili padi (Bird’s eye chilies), sliced
  • 4 Tbsp unsalted butter
  • 1 cup cornstarch
  • 2 egg whites
  • Sugar
  • Salt
  • Vegetable oil

Step 3 – Fry salted egg sauce

  • In a pan on high heat, heat up 3 Tbsp vegetable oil and fry garlic for 1 minute, until browned and fragrant.
  • In the same pan, add curry leaves and chili padi.
  • Fry for 1 more minutes, until fragrant.
  • When fragrant, add salted egg yolks and butter to the pan.
  • Fry for 2 to 3 minutes, stirring continuously, until mixture becomes foamy.
