Chef Sean Connolly is known for On the Grill, on the Asian Food Channel. He has kindly shared with us his recipe for very yummy Grilled Garlic Prawns.
Ingredients
• 150g prawns, de-veined
• 160g unsalted butter
• 1 small shallot, finely minced
• 2 garlic cloves, finely minced
• 1 handful of fresh, chopped parsley
• Salt & pepper, to taste
• 35ml of Pernod
Method
• In a heated pan, over medium heat, add the butter and fry the shallots and the garlic.
• Reduce the heat, and then cook until the aromatics have softened.
• Increase the heat of the pan, and add in the prawns.
• When the prawns are almost cooked through, add the Pernod and then flambé the prawns.
• Once the flame has died down add the salt and pepper, to taste.
• Just before serving, add the fresh parsley. Serve immediately.
