Recipe: Smoked Chicken Salad by Asian Food Channel

Beautifully smoked chicken on a bed of greens, drizzled with a refreshing tangy sauce. Healthy and delicious!

Ingredients
Serves 2 people

2 chicken breasts

160 g each
60 g mesclun greens

Substitute with any greens of your choice
40 g tea leaves

Any tea leaves
4 anchovies

4 garlic

Minced
3 shallots

Diced
1 Tbsp Dijon mustard

2 lemon

Juiced and zested
2 eggs

Hard-boiled and grated
1 French baguette

Sliced
1 Tsp unsalted butter

1 Tbsp sugar

300 ml olive oil

4 Tbsp vegetable oil

Step 4 – Pan fry chicken breast

  • In an ovenproof pan on high heat, heat up 4 Tbsp vegetable oil and place the smoked chicken skin side down for 4 to 5 minutes, until the skin is crisp.
  • Flip the chicken breast and cook for 3 minutes, until chicken ¾ cooked.
  • Place the pan into the preheated oven for 10 minutes.
