MO Bar: Go On A Journey With These Unique Cocktails

MO Bar is a sophisticated addition to the local bar scene, and offers a menu of unique cocktails, plus a spectacular view and little spark of adventure to go along with it.

The result of a unique collaboration with award-winning bar developers Proof & Company, MO Bar opened in September 2018, with a drinks menu inspired by “People of the Sea” – the different ports in the region. They aim to tell a story of adventure and exploration through the flavours, customs and myths of the Pacific Ocean; infusing local flavours into the inspired cocktails.

Cocktails in the menu are accompanied by brief story-like descriptions, and as you peruse the drinks you’ll be brought along on a journey, adventuring through the seas. Even their names evoke images of churning seas and salty sea-breeze: Rough Waters By The Coral Sea (S$26), made with herb Cognac wine and edible coral; 7000 Leagues Ahead (S$24), a Supersonic Gin & Tonic mixed with Kaffir lime leaf oil; Back To Bali (S$26), a refreshing and summery mix of Indonesian Pandan Rum and Ginger Ice Lemon Tea.

Compulsive Instagram photographers would definitely love Mother of Dragons (S$26), a wonderfully aesthetic drink pink-hued from strawberry, aloe vera, dragonfruit and cachaça. Those who are adventurous should try the mysteriously-named Sea Beast (S$28): Black Ink Coriander Soju served with Fizzy Yuzu Sushi.

MO Bar excels in the distinctiveness of their cocktails, and how they tie the nautical theme and images together so well. While it may be all well and good to just go out for drinks, plain and simple, the spin of adventure brought into the menu by the theme adds a dash of fun to the night too!

Besides that, MO Bar also hosts events: they recently had Tom Vernon, Woodford Reserve Global Ambassador, for a one-night-only bar takeover that featured three different whiskeys on a special menu – Woodford Reserve Bourbon, Woodford Reserve Kentucky Straight Rye Whiskey and Woodford Reserve Double Oaked.

We had the opportunity to try drinks like the Flight of the Manhattan, a set of three mini cocktails where you can taste the three different whiskeys, as well as the Tea Time 2.0, a spin on MO Bar’s Tea Time, but using Woodford Reserve Bourbon instead.

What made our experience even better, perhaps, was the night-time view of the cityscape we had; paired with the soulful beats of the background music and the lovely drinks we had at hand, it made for a wonderful night indeed.

In line with their theme of journey and adventure, MO Bar has embarked on a journey throughout Southeast Asia with a pop-up event series entitled “Nomadic Foragers”, where Bar Manager Michele Mariotti will collaborate with a renowned cocktail bar in each city and will work together with the host bar team to create a signature menu – served for one night only at a special guest shift event. By making use of indigenous fruits and spices from the local markets, as well as ingredients from Singapore, Michele will bring a taste of Singapore throughout the region and create a fusion of flavours to represent the nomadic spirit.

The series has kickstarted in Hong Kong at Mexican-inspired craft cocktail bar COA, with future stops on the tour including Kuala Lumpur, Bangkok, Shanghai and Sydney. For travellers and those who seek to have a taste of the world, MO Bar’s Nomadic Foragers series will be a delight indeed!
