If I had to pick only one type of seafood to have for the rest of my life, the answer is definitely crab. The firm, sweet and salty flesh pairs well with almost any sauce and I'm proud to say that we've perfected the art of cooking and eating crab here in Singapore.

5. Crab Bee Hoon

There are two types of crab bee hoon dishes that are popular in Singapore, one served dry and the other in a milky soup. Crabs retain more of their flavour in the dry version as it’s quickly wok-fried instead of boiled for a long period of time in a claypot, rendering the crabs dry and tasteless.

Eng Seng’s crab bee hoon has the best of both worlds. Its slightly wet consistency will please fans of the soup version even though it’s fried with other ingredients like mushrooms and vegetables.
