6. MOGA
Named after the Japanese slang for “modern girls,” MOGA finds its inspiration in 1920s Japan and the secretive atmosphere of the prohibition era. Nestled behind an unassuming door on the ground floor of Pullman Singapore Hill Street, this space reveals a luxurious, softly lit ambiance upon entry. Inside, guests can glimpse skewers sizzling on the robatayaki grill in an open kitchen, a bar counter stocked with an array of Japanese spirits, and a seating area juxtaposing modern and historical Tokyo through digital imagery.
At the heart of the MOGA experience lies an extensive selection of 15 cocktails designed to guide the evening’s indulgence. Crafted in collaboration with Dario Knox from Knox Beverage Consulting and Head Mixologist Marcus Liow, each drink cleverly incorporates a familiar Japanese element or spirit in innovative ways. Examples include the infusion of wasabi and shiso into a gin smash (Wasabi Smash), kinaka, miso honey, and ginger in an old-fashioned (Lost in Translation), and a rum punch blending sake with rum, passionfruit, and cava (Crystal Sake Royale).
Complementing these cocktails is a concise menu of izakaya essentials encompassing sushi rolls, sashimi, robata-grilled skewers, and sharing plates. Noteworthy highlights feature the MOGA Samurai Roll, the MOGA Katsu Sando, and the Gindara Saikyo Miso.
