If you have already been to Le Binchotan when it first opened a year and a half ago, then a second visit is warranted as the restaurant is headed in a new culinary direction with Chef Jeremmy Chiam at the helm. Like its name suggests, Le Binchotan gels the gastronomic cuisines of both French and Japanese, with the latter’s age-old cooking technique of grilling over binchontan coal is at the heart. Right off the bat, a must-order here is its Uni and Caviar ($25) – an explosive flavourful combination of uni, caviar and corn mousse that may impress some of the most stubborn uni purists. Other highlights also include Edible Charcoal ($23), a massive charcoal powder-stained spring roll filled with pulled beef, and the heartwarming Little Neck Clams ($20) vichyssoise of sake and enoki mushrooms, littered with copious amounts of clams.
