This Lunar New Year, Min Jiang at Goodwood Park Hotel introduces Snapper with Grilled Puffer Fish Yu Sheng and a Braised Chicken with Sea Treasures in Claypot.
The former features grilled puffer fish and thin snapper slices with mesclun greens, sweet potato and yam crisps, preserved melon strips and prawn roe tossed in sweet plum sauce with crackers and peanuts and sesame seeds.
The latter is a version of pen cai with pork belly, whole Australian abalones, dried oysters, flower mushrooms, black moss and broccoli. These are available from Jan 14 to Feb 14.

Cherry Garden
Mandarin Oriental’s pen cai from Cherry Garden restaurant weighs more than 25kg and has a diameter of over 45cm.
The pot is filled to the brim with superior items such as braised eight-head abalone, lobsters, scallops, sea cucumber, prawns, dried oysters, conpoy, dace fillet, roasted duck, soy chicken, crispy pork belly, waxed sausages, mushrooms, cabbage and black moss.

Hua Ting’s Chinese New Year special features braised abalone with fish maw, sea cucumber, whole conpoy with fa cai [prosperity vegetable, which resembles hair], shitake mushrooms and seasonal greens in superior oyster sauce as well as fresh salmon lo hei yu sheng.

It includes panax quinquefolius jelly, codonopsis pilosula and ginseng candies to boost energy; crispy salsify to boost the immune system; Solomon’s seal rhizome candies to fortify the lungs and kidneys; red date strips and wolfberries to improve blood circulation and eye sight; and herbal jelly to lend its cooling properties.
