Enjoy the crunchy “king of vegetables” in various sweet and savoury dishes

Prized for its tender stems as well as naturally sweet and clean flavours, the white asparagus is celebrated around the world during springtime but especially so in Germany.
Christened Spargelzeit on their annual calendar, the festival brings with it fresh harvests of the “King of Vegetables”, which can be enjoyed in various sweet and savoury dishes.
Here in Singapore, foodies can savour white asparagus at restaurants like Brotzeit, which has rolled out a special Spargelzeit menu available until 11 June.
Known for their platter-style sharing dishes, Brotzeit offers a hearty White Asparagus Platter ($78) that promises a feast of spring flavours.
Perfect for sharing, the platter comprises a hefty 400g of classic poached white asparagus, alongside shavings of Black Forest ham, honey-baked ham, tasty smoked salmon, parsley potatoes and two poached eggs.
For a light starter, try the Garden Salad with White Asparagus ($19), a colourful dish where sweet fruits such as mandarin oranges and blueberries are paired with crunchy white asparagus.
Fancy something to warm your belly? Go for the Cream Soup topped with Honey Baked Ham ($16), a well-seasoned broth that’s cooked with the water used to poach the white asparagus for extra flavour.
The most traditional way to enjoy white asparagus in its season is to have it poached.
Consider the Classic Poached White Asparagus ($25/250g), served with parsley potatoes and a generous portion of either Hollandaise sauce or brown butter for a satisfying treat.
Those who’d like a more substantial meal can opt for either Grilled Beef Tenderloin ($38) or Pan-Seared Barramundi ($34) to complete their meal.
To round off your meal, try the irresistible White Asparagus, Strawberries and Panna Cotta ($10).
The refreshing dessert offers a nice mix of textures and flavours: Crunchy asparagus and sour strawberries, all complemented by sweet and smooth panna cotta.
