Watch chef-owner Chan Hon Meng’s of Hong Kong Soya Sauce Chicken Rice and Noodle Michelin journey

We didn’t think we could love Mr Chan Hon Meng more but this video released by Michelin Singapore on Sunday proved us wrong. Not only has Mr Chan made Singapore proud by becoming the first Michelin star hawker in the world, his dedication to the hawker scene in Singapore is purely evident in this touching video.
Mr Chan recalls that he has been making Soya Sauce chicken for 35 years, a recipe he learnt from a Hong Kong chef. His little stall in Chinatown opens at 8.30am every day, although preparation begins much earlier than that. Although being a hawker is exhausting work, Mr Chan constantly has a smile on his face, and his warm personality is part of what keeps customers coming back.
The video shows him receiving his award at the Michelin Gala Dinner held in July. Surprised that the Michelin team would give a humble stall like his a star, he even called to make sure that he wasn’t mistakenly given an invitation. His enthusiasm during the Gala Dinner was palpable, culminating in his win where he almost walked off without taking a picture in his excitement.
