Here's how restaurants, cafes and bakeries are welcoming SG51

Raise your hands if you recall how last year's exciting SG50 celebrations infiltrated into all aspects of our lives — even fish cakes weren't spared.

Thankfully, less eclectic creations are popping up this year. What you'll find, are savoury dishes and desserts recreated with locally-inspired flavours.

Some are photogenic, some hint at nostalgic, but all of em' are immensely delicious.

5. Ding Dong Hokkien Prawn – Prawn Noodle 

This National Day, Ding Dong serves up its unique take on the popular local dish — Hokkien Mee.

Their recreation, called Hokkien Prawn – Prawn Noodle ($18), is a modern creation made from prawn stock with methyl cellulose (a gelling agent that sets when hot and melts when cold).

A rich accompaniment of Iberico pork belly, stir-fried with egg, garlic and prawn stock made in-house, is served with the unique noodles, along with chives to provide a tantalising mouthful. Topping it all off is a moist and fresh prawn.
